Gir Govind Ghee – Our Making Process

At Gir Govind Ghee, we combine the wisdom of tradition with modern precision to create pure, nutrient-rich Cow & Buffalo A2 Ghee. Every step is carried out with care to ensure you get authentic, golden ghee with a rich aroma and grainy texture.

Sourcing Pure A2 Milk

We collect fresh A2 milk from healthy, indigenous Gir cows and buffaloes. Each batch is tested for quality and purity to ensure only the finest milk is used.

Gentle Boiling & Cooling

The milk is boiled to remove any impurities and then cooled to the ideal temperature, preparing it for natural fermentation.

Curd Formation (Dahi)

A natural culture is added to the milk, and it is allowed to ferment slowly, forming thick, nutritious curd.

Bilona Churning

The curd is churned bi-directionally—either by hand or with a traditional Bilona machine—to separate fresh butter (makkhan) from buttermilk (mattha).

Butter Collection

The extracted butter is carefully collected while retaining its natural nutrients. The remaining buttermilk is set aside for other uses.

Slow Heating

The butter is gently simmered on a low flame, allowing it to release its golden ghee while preserving its natural aroma and health benefits.

Filtration & Packaging

The ghee is filtered to remove milk solids, cooled naturally, and packed in hygienic, food-grade containers—ready to bring authentic taste and tradition to your kitchen.
